The domain
Domaine Cornu is a family business, for four generations. Today it is Alexandre who runs the vineyard, the vinification and Isabelle the commercial and administrative management. The estate is located in Magny les Villers, in a small village between Nuits-Saint-Georges and Beaune, which benefits from an exceptional geographical situation in the heart of the Côte D'Or, between the famous Côte de Nuits and Côte de Beaune.
At each stage, from the vine to the wine, the Cornu family applies the best cultivation and vinification processes. The estate produces 15 appellations (6 whites and 9 reds) as well as 2 Crémants (one white and one rosé) on 20 hectares, in an environmentally friendly way, guaranteeing a know-how combining terroir, tradition and progress.
Terroir and breeding
The vines that produce this excellent Hautes-Côtes de Nuits grow on a clay-limestone soil, on a surface area of 65 ares, with a planting density of 3300 vines/ha. The vines are about 30 years old. The plot produces an average yield of 50 hl/ha.
The grapes are pressed with a pneumatic press, 100% settling. Maturing is done in barrels for 12 months, with 10% new barrels.
Tasting notes
Aromas of hawthorn, honeysuckle, white nettle, lemon and apple. Fat on the palate, this dashing side allows it to age well depending on the vintage.
Enhanced by a touch of vivacity, it will accompany parsleyed ham and snails. When mature, it goes very well with salted foie gras and cheeses such as Chaource, Comté or Roquefort.
